Cookies of Casentino - Ciambelline Casentinesi
INGREDIENTS
600 g flour
100 g sugar
1 teaspoon of vanilla extract
1 package yeast
1 cup of sunflower oil
1 glass of vinsanto
a bit of grappa or limoncello
PREPARATION
In a bowl put the sugar and the glass of vin santo and oil and mix well. Add the flour and add the limoncello or grappa. Finally, add the vanilla and baking powder. Knead the dough until it is smooth and homogeneous. Let stand for about 30 minutes.
Subsequently forme with your hands some wires, cut the size you prefer and forme small donuts. Meanwhile, cover a baking tray with baking paper, pass the obtained donuts in granulated sugar and place on the baking sheet. Bake them in preheated oven at 180 degrees for about 15 minutes and serve!
INGREDIENTI
600 g farina
100 g zucchero
1 bustina di vanillina
1 bustina di lievito
1 bicchiere di olio di girasole
1 bicchiere di vinsanto
un po' di grappa o limoncello
PREPARAZIONE
In una zuppiera unite allo zucchero il bicchiere di olio e di vinsanto e mescolate bene. Aggiungete un po' alla volta la farina ed aggiungete il limoncello o grappa. Per finire aggiungete la vanillina ed il lievito. lavorate l'impasto fino ad ottenere una pasta morbida ed omogenea. Lasciate riposare per circa 30 minuti.
Successivamente formate con le mani dei fili, tagliateli della misura che preferite e formate delle piccole ciambelle. Nel frattempo coprite una teglia con della carta da forno, passate le ciambelline ottenute nello zucchero semolato e disponetele sopra la teglia. Infornate a forno già caldo a 180° per circa 15 minuti e servite!

I biscotti di Arlecchino - Arlecchino biscuits
INGREDIENTS
10 biscuits
100 g mascarpone
100 g butter
5 tablespoons unsweetened cocoa powder
colored sprinkles
PREPARATION
In a medium bowl, chop biscuits, then pour in it butter, mascarpone and cocoa. Mix well. Prepare little balls and roll them in the colored sprinkles.
Arrange them on a tray covered with foil and put it in the fridge for several hours.
INGREDIENTI
10 biscotti secchi
100 g mascarpone
100 g burro
5 cucchiai di cacao amaro
zuccherini colorati
PREPARAZIONE
in una zuppiera sbriciolare i biscotti, successivamente versare il burro, il mascarpone ed il cacao amaro. Mescolare bene. Preparare delle palline e farle rotolare negli zuccherini colorati.
Disporle su un vassoio ricoperto da carta argentata e mettere in frigorifero per alcune ore.

INGREDIENTS
- 300 g brown sugar
- 300g flour
- 100g water
- 100g shelled walnuts
- 60 g candied
- 15g spices (coriander, anise, fennel love, a lot of cinnamon)
PREPARATION
In a saucepan put the sugar and 'water and bring to a boil. Boil a few minutes and then pour the chopped walnuts, candied fruit, spices (I put a teaspoon of allspice and a teaspoon of cinnamon) and finally the flour. Stir quickly and with your hands make balls. Grease or put parchment paper on a baking tray and bake for 15 minutes at 150 - 160. Do not worry if they seem too soft and it is important not to dry out too much. You can also put them in the bags, they are maintained very well.

300g farina
100g acqua
100g noci sgusciate
60 g canditi
15g spezie ( coriandolo, anice, amo di finocchio, molta cannella)
PREPARAZIONE
In un pentolino mettere lo zucchero e l' acqua e portarlo a bollore. Farlo bollire qualche minuto e dopo versare i le noci tritate grossolanamente, i canditi, le spezie( io ho messo un cucchiaino di spezie miste ed un cucchiaino raso di cannella) ed infine la farina. Mescolare velocemente e con le mani fare delle palline. Ungere o mettere la carta da forno in una teglia ed infornare per 15 minuti a 150 - 160. Non vi preoccupate se sembrano troppo morbidi, e' importante che non si secchino eccessivamente. Potete anche metterli in dei sacchetti, si mantengono benissimo.
