Chickpea flatbread - La cecina
INGREDIENTS
180 g chickpea flour
600 g water
6 tablespoons extra virgin olive oil
salt
pepper
PREPARATION
Preheat oven to maximum temperature.
Place the flour in a large bowl and pour 3 tablespoons of olive oil, a teaspoon full of salt and water gradually, stirring to mix the two ingredients until the mixture is smooth and without lumps.
Let stand until the oven is heating.
Oil the pan with 3 tablespoons of olive oil and pour the cecina.
Place in oven for 15/20 minutes until it forms a ridged crust on the surface.

600 g acqua
6 cucchiai di olio extra vergine d'oliva

PREPARAZIONE
Accendere il forno alla massima temperatura consentita.
Disporre la farina in una ampia ciotola e versarvi 3 cucchiai d’olio, un cucchiaino colmo di sale e progressivamente l’acqua mescolando per amalgamare bene i due ingredienti fino ad ottenere un composto liscio, fluido e senza grumi.
Lasciate riposare finché il forno non arriva a temperatura.
Oliate uniformemente la teglia con 3 cucchiai d’olio e versarvi la cecina.
Mettere in forno per 15/ 20 minuti finché non si forma una crosticina increspata in superficie.

Streetfood in Arezzo
Arezzo, 6-7 October 2012.
The charm of Italian street food stops in Arezzo. Back to this weekend at Prato (Meadow) with gastronomic specialties. The event with its stands in the city will bring the delicious oranges and traces, but also the flatbread and fried, the fried pizza, Neapolitan pizza, fried cod fillets, fried mixed. Prato will also come to the porchetta, lamprdedotto, all washed down with a good wine and even sweets typical of the area, such as the chestnut and the pancakes Savelle of Siena
The big news this year will be beer, debut, in fact, the new craft blonde double malt "Clara" brand Streetfood.
The appointment is in the enchanting surroundings of Prato of Arezzo, who in recent months and' returned the crossroads of life Arezzo, for the festival of food and wine that will involve all tastes.
The street foods, first than Arezzo had already fermatinelMugello, aBorgo San Lorenzo at the "Vie del Gusto" and in Piedmont "Streately" the seat of Eataly in Turin.

Il fascino del cibo di strada italiano fa tappa ad Arezzo. Torna in questo weekend al Prato con le specialità gastronomiche. La manifestazione con i suoi banchi porterà in città i buonissimi arancini e le tirelle, ma anche la piadina ed il fritto, la pizza fritta, la pizza napoletana, filetti di baccalà fritti, fritto misto. Al Prato arriveranno anche la porchetta, il lamprdedotto e gli spiedini, il tutto annaffiato da un buon vin ed anche dolci tipici della zona, come il castagnaccio e le frittelle Savelle di Siena.
La grande novità di questa edizione sarà la birra; esordirà, infatti, la nuova artigianale bionda doppio malto " Clara" a marchio Streetfood.
L'appuntamento è nella suggestiva location del Prato di Arezzo, che negli ultimi mesi e' tornato il crocevia della vita aretina, per la rassegna eno- gastronomica che coinvolgerà tutti i palati.
