Festa di Sant'Anna - Firenze
Firenze, July 26
On the 26th of July the ouster of Duke of Athens Walter of Brienne marks in Florence; the Duke came to power thanks to the internal dissensions in the Florentine ruling class.
The Florentine people rebelled against the oppression and violence,and on the 26th July 1343 he succeeded in expelling the Duke from town.
From that day on St. Anne was proclaimed Patron Saint of the freedom of the city and 26 July became so feast day.
The new Signoria decided to put the effigy of the saint in Orsanmichele, which was the church and granary of the city. Putting the image of the saint indicated the official and civic nature of the "new religion", the veneration that you wanted to pay tribute.
The altar became the focus of the festival, around it were crowding the faithful offering gifts to the figure of St. Anne.
Then it was decided that every 26 July the image of St. Anne in Orsanmichele were decorated with the flags of the arts and the people went to bring as a gift candles or coins.
The tradition has remained to the present day, including the start of the parade at 9.00 p.m from Palazzo Vecchio, which will join the commissioner to the folk traditions with the Banner of Florence, in order to reach the churchyard of Santa Maria del Fiore by via dei Calzaiuoli. Il 26 luglio ricorre per Firenze la cacciata del Duca d’Atene Gualtieri di Brienne, salito al potere grazie alle discordie interne alla classe dirigente fiorentina.
Il popolo fiorentino si ribellò ai soprusi ed alle violenze e, proprio il 26 luglio 1343 riuscì a cacciare il Duca dalla città.
Da quel giorno Sant’Anna fu proclamata Santa protettrice della libertà della città e il 26 luglio divenne così giorno di festa.
La nuova Signoria decise di porre l'effige della santa in Orsanmichele, che era chiesa e granaio della città. Mettere l'immagine della santa stava, quindi, ad indicare l'ufficialità e la natura civica del "nuovo culto", della venerazione che le si voleva tributare.
L'altare divenne il fulcro della festa, intorno ad esso si affollavano i fedeli offrendo doni alla figura di Sant'Anna.
Si decise così che proprio a Orsanmichele ogni 26 luglio l’immagine di Sant'Anna venisse addobbata con le bandiere delle arti e che il popolo si recasse a portare in dono ceri o monete.
La tradizione è rimasta fino ai nostri giorni e prevede la partenza del corteo storico alle 20.45 da Palazzo Vecchio, cui si unirà l'assessore alle tradizioni popolari con il Gonfalone di Firenze, per giungere sul sagrato di Santa Maria del Fiore per via Calzaiuoli. A questo punto le autorità religiose si uniranno al corteo che, per via Roma, raggiungerà la chiesa di Orsanmichele per al tradizionale offerta e benedizione dei ceri. Biscuits Swivel - Biscotti Girella
INGREDIENTS
600g flour
400 g butter
250 g sugar
2 eggs
2 whites
150 g plain chocolate
150 g milk chocolate
some tablespoons of cocoapowder
PREPARATION
Prepare the pastry and then divide it into two parts, of which a 1/3 of the other. Meanwhile, melt the chocolate. Pour into the smallest part of pastry the melted chocolate and make compact with cocoa powder and, if necessary, add a little of flour.
Over a sheet of aluminum foil, spread a thin rectangular sheet with pastry and brush with egg white. Do the same with the chocolate shortbread. Roll out the dough to lie down on top of the dough with cocoa to make it fit well. Start to roll on themselves the two layers of pastry, very tight, in the sense of the length.
Wrap the long roll in aluminum foil to cut it into two parts.
place in the refrigerator for about an hour.
Cut into slices about half a centimeter with a clean cut with a knife, without smearing the dough.
Arrange the biscuits on a baking sheet covered with baking paper and bake for 20 minutes at 160 degrees.

150 g cioccolato fondente
150 g cioccolato al latte
qualche cucchiaio di cacao in polvere
PREPARAZIONE
Fare la pasta frolla e poi dividerla in due parti, di cui una 1/3 dell'altra. Nel frattempo far sciogliere la cioccolata. Versare nella parte di pastafrolla più piccola la cioccolata fusa e ricompattarla con il cacao in polvere e, se necessario, aggiungere un po' di farina.
Stendere, sopra un foglio di carta di alluminio, una sfoglia rettangolare sottile con la pasta chiara e spennellarla con un albume. Fare lo stesso con la pasta frolla al cioccolato. Stendere la sfoglia di pasta a e stenderci sopra la sfoglia al cacao a farla combaciare bene. iniziare ad arrotolare su se stessi i due strati di sfoglia, stretti stretti, nel senso della lunghezza.
Avvolgere il lungo rotolo nella stagnola a tagliarlo in due parti.
riporre in frigo per circa un'ora.
Tagliare fettine di circa mezzo centimetro con un taglio deciso di coltello, senza creare sbavature nella pasta.
Disporre i biscotti su una teglia coperta da carta da forno e cuocere per 20 minuti a 160°.

In questi due fine settimana, Monteriggioni si veste a festa, tornano a rivivere personaggi reali e leggendari di un passato ormai lontano, ma che suscitano ancora mistero e magia. Acrobati, saltimbanchi, giocolieri, soldati, dame, cavalieri.....ripopolano questo antico borgo, fra i più bei borghi italiani, per renderlo ancora più suggestivo ed affascinante. Addirittura fuori dalle mura verrà allestito un presidio militare, con soldati e cavalieri, pronti per partire per le Crociate in terra Santa.
Il visitatore partecipa a questa atmosfera, infatti all'ingresso del castello si può cambiare l'Euro con il "Grosso", l'antica moneta della Repubblica Senese, coniata appositamente per l'occasione. All'interno, inoltre, sono presenti bancarelle e locande dove si possono degustare piatti tipici locali, accompagnati da un ottimo vino. Le stradine ed i vicoli si animano con antichi mestieri, come il fabbro, i concai, che svelano i segreti della lavorazione degli orci, i maniscalchi e la bottega dello speziale, il fornaio.
Il programma è ricco di eventi ed iniziative, con musica, danze medioevali, artisti di strada, spettacoli teatrali, che lasceranno i visitatori ammaliati.
Sono in programma anche attività per i più piccoli, come la realizzazione di giocattoli, oggetti ed indumenti medioevali. Inoltre i bambini potranno giocare a giochi tipici medievali, come il gioco del tiro alla fune, il gioco della trave, palla a corda e giochi più antichi come Alea e Veleno.

attorno alla collina del paese, denominate Monteriggioni Scuole, Monteriggioni

di aglio rosso ( facoltativo )

pane casareccio abbrustolito a persona
Pulire il
pesce eliminando le interiora, lavare velocemente, asciugare, sfilettare e
tritare la polpa con un coltello ( mai con tritacarne elettrici perché si
rischierebbe di scaldare il pesce compromettendone il risultato finale) .In un tegame di coccio far appassire la
cipolla tagliata molto sottile,i gambi teneri del finocchietto, unire il
pomodoro, lo sgombro tritato e il peperoncino, rosolare per qualche minuto e
bagnare con il vino. Far evaporare l’alcool , aggiungere le barbine tritate del
finocchietto e le olive intere. Continuare la cottura a fuoco dolce per pochi minuti (massimo 5 minuti ) quindi mettere il sugo su
fette di pane abbrustolite e ,a piacere,
strofinate con aglio rosso.

Apples bites - Cuor di mela
INGREDIENTS
200 g flour
125 g butter
100g sugar
2 eggs
2 tablespoons of apricot jam
a pinch of cinnamon
PREPARATION: Pour the flour on a pastry flour Add eggs and mix. Add butter and sugar. In the meantime preheat the oven at 180. Mix quickly until the dough is quite elastic and compact. Form the dough into a ball, wrap it in a tea towel and place it in the refrigerator for at least half an hour. After half an hour, remove the dough from the refrigerator and roll out it on a lightly floured pastry flour. .
Peel the apples into small pieces and fry in a pan with jam. Roll out the dough with a rolling pin. Achieve a thickness of about half a centimetre. Cut a stencil with many daisies, spread the mixture on half of apples and jam.
Cover with the remaining crushed daisies and the edges slightly. Cover the baking sheet with parchment paper, place the daisies and bake at 180 for about 20 minutes. Sprinkle with icing sugar.

un pizzico di cannella
PREPARAZIONE
Mettere la farina aggiungendo uova e mischiare. Aggiungere burro e zucchero. Nel frattempo pre-riscaldare il forno a 180 gradi. Mischiare velocemente finché la mistura non è elastica e compatta. Fare una palla della mistura e mettere in uno straccio lasciando riposare la pasta nel frigorifero per almeno 30 minuti. Dopo circa 30 minuti, rimuovere la pasta dal frigorifero e stenderla fino ad uno spessore di circa 0,5 cm
Sbucciate le mele a pezzettini piccoli e fatele rosolare in padella con la marmellata. Stendete la pasta con il matterello, con uno stampino ritagliate tante margherite, su metà distribuite il composto di mele e marmellata. Ricoprite con le rimanenti margherite e schiacciate leggermente i bordi. Rivestite la placca da forno con carta d sforno, disponetevi le margherite e fate cuocere a 180 per circa 20 minuti. Spolverate con lo zucchero a velo.

Artichoke risotto - Risotto di carciofi alla toscana
INGREDIENTS
350 gr rice
6 artichokes
50 gr ham
50gr butter
100 cl meat broth
A bunch of parsley
Parmesan cheese
Salt and pepper
PREPARATION
Peel the artichokes back to their pale, light leaves, then halve them and remove the hairy cakes with a teaspoon.
Immerse artichokes in water with the lemon juice.
Chop the ham and place in a saucepan the butter, half of the chopped parsley and ham.
Sauté all at moderate heat for a few minutes, then add the drained artichokes. Add a little 'hot broth and cook for 10 minutes, stirring occasionally.
Then add the rice and let it flavor briefly, then continue cooking for 15 minutes, basting occasionally with the broth. Finally, season with salt and pepper, add the rest of the chopped parsley and grated cheese, stir and serve with care.

PREPARAZIONE
Pulite i carciofi privandoli delle punte e delle foglie esterne, poi tagliateli a fette, eliminate il fieno e metteteli a bagno in una terrina colma d'acqua acidulata con succo di limone. Tritate il prosciutto e mettete in una casseruola il burro, metà del prezzemolo tritato e il prosciutto crudo.
Fate rosolare il tutto a calore moderato per alcuni minuti, poi unite i carciofi sgocciolati. Unite un po' di brodo caldo e fate cuocere per 10 minuti, mescolando di tanto in tanto.
Dopodiché unite il riso, fatelo insaporire brevemente, poi proseguite la cottura per 15 minuti bagnando di tanto in tanto con il brodo. Infine regolate di sale e pepe, unite il resto del prezzemolo tritato e il formaggio grattugiato, rimestate con cura e servite

I biscotti di Arlecchino - Arlecchino biscuits
INGREDIENTS
10 biscuits
100 g mascarpone
100 g butter
5 tablespoons unsweetened cocoa powder
colored sprinkles
PREPARATION
In a medium bowl, chop biscuits, then pour in it butter, mascarpone and cocoa. Mix well. Prepare little balls and roll them in the colored sprinkles.
Arrange them on a tray covered with foil and put it in the fridge for several hours.

zuccherini colorati
PREPARAZIONE
in una zuppiera sbriciolare i biscotti, successivamente versare il burro, il mascarpone ed il cacao amaro. Mescolare bene. Preparare delle palline e farle rotolare negli zuccherini colorati.
Disporle su un vassoio ricoperto da carta argentata e mettere in frigorifero per alcune ore.

Carnevale dei Figli di Bocco
Castiglion Fibocchi (AR), from the 1st to the 8th February.
Castiglion Fibocchi is a small town in the province of Arezzo, whose name derives from the Latin "castellum", that is fortified and "Filis Bocchi", which literally means sons of Bocco. Probably the name dates back to the time of the Lord Ottaviano de 'Pazzi, Bocco said, for a deformation of the face around 1190.
Many stories tell of fabulous medieval celebrations in the country before Lent, so about ten years ago has been restored this ancient tradition.
The festival, now in its seventeenth edition, is organized into two days: more than two hundred listed parade through the streets, alleys and picturesque squares of the village, hidden from precious masks and dressed in very elegant, luxurious costumes.
It's a fascinating show, two days when the atmosphere is magical timeless. The masks reminiscent of the most festive carnival of Venice, but the atmosphere is more intimate, where masks are waiting on street corners to surprise and wrap the visitors with their beautiful and original costumes.
The show begins at 3:00 p.m with the opening of food stands, at 4:30 p.m it continues the opening speech of the King Bocco his court and the parade of masks begins for all the roads of the village. All surrounded by happiness of many street artists and skill of Madonnari, depicting the masks of the Sons of Bocco.
How to reach Castiglion Fibocchi: for that is from Florence (A1) exit at Valdarno and follow the signs to Loro Ciuffenna and then to San Giustino.

Le maschere ricordano il più festoso carnevale di Venezia, ma l'ambiente è più intimo, più raccolto, in cui le maschere attendono agli angoli delle strade per stupire ed incartare i visitatori con i loro meravigliosi ed originali costumi.
Lo spettacolo inizia alle ore 14.30 con l'apertura degli stands gastronomici, alle 16.00 prosegue il discorso di apertura del Re Bocco alla sua corte ed inizia la sfilata dei tutte le maschere per le strade del piccolo centro. Il tutto contornato dall'allegria di svariati artisti di strada e dalla bravura dei Madonnari, che riproducono le maschere dei Figli di Bocco.

Ribollita Soup - Zuppa Ribollita
RIBOLLITA
INGREDIENTS
300 g stale Tuscan bread
400g dried white beans
A cabbage
A cabbage
3 bunches of beets
2 potatoes
2 stalks of celery
2 onions
A few tablespoons of tomato paste
Olive oil
Salt and pepper
PREPARATION
Boil the beans into two liters of cold water. Meanwhile in another pan fry, with 8 tablespoons of olive oil, chopped onions. When the onion wilts, dice the carrots, potatoes, trimm cabbage, beets and add them to the pot with the broth. Adjust seasoning to taste and cook for a few minutes. Meanwhile, blend the 3 quarters of the beans with a hand mixer until smooth and add the puree.
Allow to cook for a long time, until all the vegetables are well cooked, about 2 hours. At this point add the bread in pieces and the remaining beans. Cook for another 10 minutes, when the bread is softened, turn off and let cool, better overnight.
In a pan put oil, when it is hot add a little of soup, add also tomato paste and make them coagulate. Serve hot or warm

400g fagioli bianchi secchi
Un cavolo nero

3 mazzetti di bietole
2 patate
2 gambi di sedano
2 cipolle
Qualche cucchiaio di conserva di pomodoro
Olio d'oliva
Sale e pepe
PREPARAZIONE
Lessare i fagioli in due litri di acqua fredda. Nel frattempo rosolare in un'altra pentola, con 8 cucchiai di olio, le cipolle tritate. Quando la cipolla appassisce, tagliare le carote, le patate, la verza, il cavolo nero, le bietole ed aggiungerli nella pentola insieme al brodo. Aggiustare di sale e pepe e far cuocere per alcuni minuti. Intanto passate i tre quarti dei fagioli ed aggiungere nella pentola la purea.
Lasciare cuocere a lungo, fino a quando non saranno ben cotte, a questo punto aggiungere il pane tagliato a pezzi ed i fagioli interi. Cuocere per altri 10 minuti, quando il pane si sarà ben ammorbidito, spegnere e lasciare intiepidire, meglio se tutta la notte.
In una padella mettere dell'olio, quando è caldo aggiungere un po' di zuppa, aggiungere un po' di conserva di pomodoro e far rapprendere. Servire calda o tiepida.

When the onion wilts, dice the carrots, potatoes, trimm cabbage, beets and add them to the pot with the broth. Adjust seasoning to taste and cook for a few minutes. Meanwhile, blend the 3 quarters of the beans with a hand mixer until smooth and add the puree.
Allow to cook for a long time, until all the vegetables are well cooked, about 2 hours. At this point add the bread in pieces and the remaining beans. Cook for another 10 minutes, when the bread is softened, turn off and let cool, better overnight.
In a pan put oil, when it is hot add a little of soup, add also tomato paste and make them coagulate. Serve hot or warm

400g fagioli bianchi secchi
Un cavolo nero
Un cavolo verza
3 mazzetti di bietole
2 patate
2 gambi di sedano
2 cipolle
Qualche cucchiaio di conserva di pomodoro
Olio d'oliva
Sale e pepe
PREPARAZIONE
Lessare i fagioli in due litri di acqua fredda. Nel frattempo rosolare in un'altra pentola, con 8 cucchiai di olio, le cipolle tritate. Quando la cipolla appassisce, tagliare le carote, le patate, la verza, il cavolo nero, le bietole ed aggiungerli nella pentola insieme al brodo. Aggiustare di sale e pepe e far cuocere per alcuni minuti. Intanto passate i tre quarti dei fagioli ed aggiungere nella pentola la purea.
Lasciare cuocere a lungo, fino a quando non saranno ben cotte, a questo punto aggiungere il pane tagliato a pezzi ed i fagioli interi. Cuocere per altri 10 minuti, quando il pane si sarà ben ammorbidito, spegnere e lasciare intiepidire, meglio se tutta la notte.
In una padella mettere dell'olio, quando è caldo aggiungere un po' di zuppa, aggiungere un po' di conserva di pomodoro e far rapprendere. Servire calda o tiepida.

Cavolo strascicato

INGREDIENTS
a cauliflower 300 g tomato sauce 2 cloves of garlic 2 sausages 150 g black olives Salt and pepper
PREPARATION
Boil the cauliflower in salted water. Let cool, then divide into florets and cut the stalk into pieces. In a pan fry in 8 tablespoons of olive oil, the garlic and before the cloves take the color add the sausages, skinned and cut into pieces. Add the cauliflower, salt and pepper and let it cook for few minutes. Mix with the tomato sauce and cook for about half an hour. A few minutes before removing from the heat, add the olives.

In una padella fate rosolare, in 8 cucchiai di olio, gli spicchi di aglio interi e prima che prendano il colore unite le salsicce spellate e tagliate a pezzetti.
Aggiungete il cavolfiore, salate, pepate e fatelo insaporire per qualche minuto.
Unite anche la salsa di pomodoro e cuocete per circa mezz'ora.
Pochi minuti prima di togliere dal fuoco aggiungete anche le olive.

Cortona

Spaghetti alla Fornaia
INGREDIENTS
350 gr Spaghetti or bibs
50 gr shelled walnuts
A bunch of basil
4 tablespoons of Parmesan cheese
Olive oil
Salt and pepper
PREPARATION
Finely chop the walnuts. In a large frying pan put the walnuts, chopped basil and plenty of olive oil, because you have to get a thick cream, pesto type. Add the grated Parmesan cheese and heat. Meanwhile, cook the spaghetti slightly underdone. As soon as they are cooked, pour into the pan and stir. Serve hot.

Aggiungete il parmigiano grattato e fate scaldare. Nel frattempo cuocere dal dente gli spaghetti. Non appena saranno cotti, versateli nella padella e mescolare. Servire ben caldi.

CENCI typical Tuscan sweet carnival
INGREDIENTS
300 g flour
50 g sugar
2 eggs
30 g butter
A glass of vin santo and grappa
Orange peel
A pinch of salt
Icing sugar
Oil for frying
PREPARATION
Mix the flour with the eggs, sugar, melted butter, a glass of liquor (I have not made because I have small children, I used milk), a teaspoon of orange zest and a pinch of salt.
Work well in order to obtain a smooth dough, make a ball and let it rest for about an hour in a cool place.
Roll the dough quite thin and cut into thick strips and then in irregular pieces or strips, as you prefer.
Fry in plenty of hot oil.
As you are ready to set the rags on a sheet of kitchen paper and sprinkle with icing sugar.
You can taste both hot and cold.

Scorza d'arancia
Un pizzico di sale
Zucchero a velo
Olio per friggere
PREPARAZIONE
Impastare la farina con le uova, lo zucchero, il burro fuso, un bicchierino di liquore ( io non l'ho messo perché ho dei bambini piccoli, ho usato un po' di latte), un cucchiaino di scorza d'arancia e un pizzico di sale.
Lavorare bene in modo da ottenere una sfoglia liscia, fate una palla e lasciarlo riposare circa un'ora al fresco.
Tirare la sfoglia piuttosto sottile e tagliatela a grosse strisce e poi a pezzi irregolari o a losanghe, come preferite.
Friggerli in abbondante olio caldissimo.
Man mano che sono pronti mettere i cenci su un foglio di carta da cucina e cospargerli con lo zucchero a velo.
Si gustano sia caldi che freddi.
